The Best Cow, and Grain Free Corn Bread Ever!

Oh it's autumn and I love seasonal food. Corn bread, pumpkin pie, stiffing ect...
But I don't want to be bold I still want to eat as clean as I can.  So I've been playing with my favorite recipies. Finding replacements for grain, sugar and cow.  

A couple weeks ago I had a bit of kitchen fun making my own corn bread recipe. My inspiration is based on a sothern style cornbread recipe I found online. I just tweeted it a bit!  Now I had a bit influence from thai cuisine.

Lindsey's corn bread recipe:

Preheat the oven to 175c or 375f.

Combine all dry ingredients in a bowl:
1 cup cornmeal
1/2 cup maze flower
1/2 cup tapioca flower
2 tablespoons baking powder

Combine and add to dry ingredients:
3 eggs
1 cup coconut milk (from a can, you can purchase from your local Asian market)
1/2 cup coconut oil
Squeeze of honey

Salt to taste

Pour mixture in a bread or cake pan.

Bake for 40 minutes or until you stick a knife in the centre of bread and it comes out clean.

I'm mad about this bread it's so mmmmm! Please give it a try and tell me what ya think.

Ayurveda Yogi

Since this last June I've been messing around with my diet and exercise habits.  Since then I've tried several different ways of eating including the paleo diet and since the end of July I've become addicted to yoga. I've lost and kept off between 17 and 20 pounds, I'm feeling great, i have loads of energy and much more.

Been Reading a bit about the Ayurvedic approach to eating recently. Very interesting concepts and I'm curious to give it a go. I've been browsing loads of websight on the subject and this one so far is my favorite http://holisticonline.com/ayurveda/ayv_home.htm.  I took the Dosha quiz and found out that i have Pitta imbalance with Vata coming second.  So I'm going to be eating suggested foods and trying recipes that balance these Dosha's.

This weekend I made my own Ghee:
